Getting back on track

I spent the last week in Outer Banks, North Carolina on a very relaxing and much needed vacation with Eric and his family! It was so much fun getting to lounge around without a care in the world for a whole week, ignoring any emails that popped through on my phone. It’s so necessary to get away every once in a while, whether it’s a whole week or a long weekend trip. Definitely good for your mental health to take a break from work!

That being said, I definitely went off my usual schedule this past week, including but not limited to my diet. I love using MyFitnessPal to keep track of what I eat, but I took the week off of that – and I’m ready to get back to some normal eating habits starting today!

My main must-have to get my diet back on track? Water. While I definitely allow myself a cup of coffee to start the day (with 2% milk and Splenda), I have a 24-oz tumbler that I plan to put to good use to keep track of my water intake. My goal will be two tumblers-full for my first day.

First up is breakfast. On vacation, I had plenty of breakfasts filled with eggs and muffins and donuts. Well, no more! I’m starting the day with a light yogurt and granola parfait so I kick it off well.


Yesterday, I decided I wanted to make a simple soup to have for lunch this week. Even though it’s 90° outside, I love nothing more than a cup of soup for a tasty lunch. I made a big batch of Creamy Chicken + Lemon Orzo Soup with a recipe from Simply Scratch. I got something similar from Au Bon Pain and knew it’d be a perfect soup light enough for summer.


This weekend, Eric and I came across a farmer’s market in Dupont and stocked up on fresh fruit for the week. I’ve never been a huge peach person, but they had them at every turn. I tried a sliver to taste and I was completely convinced! I grabbed a few to have as a midday snack with a handful of almonds.

Tonight, I’ll make a favorite recipe from The Skinnytaste Cookbook by Gina Homolka – Mahi Mahi Fish Tacos with Spicy Avocado Cream. Fish is a favorite of mine, and I’m very partial to these yummy fish tacos! They come in at 149 per taco, so you don’t even have to feel guilty about eating them.
